Dullahan is a bit annoying, but he's not hard. When he defends(shield) you wont do much to his health.
When he charges, dodge him using the platforms, there is a moment of weakness/pause when he reaches the other side. Abuse that, and wail on his back. Also note, when he uses Rising Swords, attacks will be weakened against him.
If you're really desperate to inflict damage to him without taking too much, abuse/make use of his Rising Swords skill.
While in the skill animation, he will not be able to damage you, and is open to attacks.
Simply jump stand on a side platform to lure him closer, jump and tap the top platform lightly, and get down to attack him, mid-animation.<br>
