As for the Saber Knight thing, my best guess is that that's also the only path where she actually is/continues to be a Velder Knight, as the other path's story videos still depict her outside of Velder despite never becoming Saber Knight. You are probably right about her already being Saber Knight before the Before Joining quests, though, since the story quests specifically depict the main story paths.
